This is a typical 21st century caviar. Just like Bjørk Premium, the eggs are from a hybrid sturgeon farmed in the south Yunan Province. These fish produce large (minimum 3.2 mm) dark golden eggs. This sturgeon caviar is immensely creamy, dense and nutty. At its best enjoyed either on its own or with very subtle pairings.
Our genuine Oscietra is farmed in Turnhout, Belgium by a small family-owned farm. These eggs are rarely harvested when they first appear, instead the fish are left to reabsorb the eggs initially. When finally harvested they come back firm and glistening with a unique complex flavor.
White sturgeon are indigenous to the US but only this farm has managed to perfect how you raise these fish.

This small, dark, and creamy caviar has a pronounced saltiness and finish that has been compared to butterscotch. Baerii is a caviar that has typical notes to start, dies down in flavor, and then finishes strong with a complex taste.
