This amazing golden yellow caviar, farmed in the pristine waters of southern Yunan province, is only available seasonally. The eggs are selected based on their size as well as their oil content. When available, it is an unrivalled sturgeon caviar for fans of something exotic as well as unique. This should ideally be enjoyed on its own.

This is a typical 21st century caviar. Just like Bjørk Premium, the eggs are from a hybrid sturgeon farmed in the south Yunan Province. These fish produce large (minimum 3.2 mm) dark golden eggs. This sturgeon caviar is immensely creamy, dense and nutty. At its best enjoyed either on its own or with very subtle pairings.

White sturgeon are indigenous to the US but only this farm has managed to perfect how you raise these fish.

The eggs of this sturgeon caviar are smaller than you would expect but that is why they are so firm and appreciated.

This small, dark, and creamy caviar has a pronounced saltiness and finish that has been compared to butterscotch. Baerii is a caviar that has typical notes to start, dies down in flavor, and then finishes strong with a complex taste. The country of origin for this sturgeon caviar varies between Spain, Poland, and Madagascar, depending on availability. Please ask a member of staff for the type we currently carry.
